{"id":18974,"date":"2023-11-01T14:15:07","date_gmt":"2023-11-01T21:15:07","guid":{"rendered":"https:\/\/soledaddurazo.com\/?p=18974"},"modified":"2023-11-01T23:05:32","modified_gmt":"2023-11-02T06:05:32","slug":"tamales-guanajuatenses-rojos-y-verdes","status":"publish","type":"post","link":"https:\/\/soledaddurazo.com\/blog\/2023\/11\/01\/tamales-guanajuatenses-rojos-y-verdes\/","title":{"rendered":"Tamales guanajuatenses rojos y verdes"},"content":{"rendered":"<h1>Tamales guanajuatenses<\/h1>\n<p><strong>Ingredientes\/<\/strong><br \/>\n-1 kilo de masa blanca para tortillas<br \/>\n-1\/4 de litro donde se coci\u00f3 la carne del relleno<br \/>\n-400 gramos de manteca de puerco<br \/>\n-1 1\/2 cucharaditas de polvo para hornear<br \/>\n-1 cucharada de sal (o s\u00f3lo una pizca si se quieren hacer los tamales de dulce)<br \/>\n-50 hojas de ma\u00edz para tamal lavadas, remojadas y secas<\/p>\n<p><strong>Relleno rojo<\/strong><br \/>\n-125 gramos de chiles anchos desvenados, despepitados y remojados en agua muy caliente<br \/>\n-3 dientes de ajo<br \/>\n-1 cucharada de manteca de cerdo<br \/>\n-300 gramos de maciza de puerco cocida con una cebolla y hierbas de olor y deshebrada<br \/>\n-Sal al gusto<\/p>\n<p><strong>Relleno verde<\/strong><br \/>\n-750 gramos de tomates verdes pelados<br \/>\n-1\/4 de taza de cilantro picado<br \/>\n-1 cucharada de manteca de puerco<br \/>\n-1 cebolla mediana finamente picada<br \/>\n-6 o al gusto chiles serranos finamente picados<br \/>\n-Sal al gusto<br \/>\n-250 gramos de maciza de puerco cocida con 1 cebolla, 2 dientes de ajo y hierbas de olor hasta que est\u00e9 suave y deshebrada<\/p>\n<p>Preparaci\u00f3n\/<\/p>\n<p>Bate muy bien la masa y el caldo con la mano o con la batidora (si es a mano deben batirse 20 minutos). Aparte, haz lo mismo con la manteca hasta que quede esponjosa y a\u00f1ade a la masa. Sigue batiendo vigorosamente hasta que, al poner un pedazo en una taza de agua fr\u00eda, esto flote. Agrega el polvo para hornear y sal y mezcla bien. Distribuye una cucharada de masa en cada hoja de tamal, rellena, dobla y pon a cocer en una tamalera o en una vaporera sobre un colch\u00f3n de hojas de tamal. Deja cocer durante 45 minutos o hasta que se desprendan f\u00e1cilmente de las hojas.<\/p>\n<p>Relleno rojo<\/p>\n<p>Licua los chiles anchos con los ajos y el agua donde se remojaron. Fr\u00ede esta salsa en la manteca, a\u00f1ade la carne, sazona con sal y deja hervir unos minutos hasta que quede espesita.<\/p>\n<p>Pon a cocer los tomates con 1\/2 taza de agua y sal al gusto hasta que est\u00e9n suaves, deja enfriar un poco y licua con el cilantro.
