Para esta ocasi\u00f3n bastar\u00e1 con un par de carcasas de pollo y algunas verduras, aunque tambi\u00e9n podemos utilizar huesos de cerdo o ternera, como prefiramos. A mi me gusta el pollo porque es m\u00e1s suave y luego su sabor no dominar\u00e1 al de las costillas y los ajetes. Media hora en la olla expr\u00e9s con abundante agua y listo.<\/p>\n<p data-mrf-recirculation=\"Article links\">Mientras el caldo se hace, separamos las\u00a0<a href=\"https:\/\/www.directoalpaladar.com\/ingredientes\/carnes-rojas\/costillas-de-cerdo\">costillas de cerdo<\/a>\u00a0del costillar (es f\u00e1cil, porque hay carne entre hueso y hueso) y pelamos y cortamos los\u00a0<a href=\"https:\/\/www.directoalpaladar.com\/ingredientes\/verdura\/ajetes\">ajos tiernos<\/a>\u00a0evitando la parte verde m\u00e1s oscura. Tambi\u00e9n picamos una cebolla tierna (o normal), aunque si no os gusta se puede quitar, y dos dientes de ajo.<\/p>\n<p data-mrf-recirculation=\"Article links\">En una paella o sart\u00e9n grande, doramos los ajos (los secos, no los tiernos) y luego sofre\u00edmos la cebolla. Despu\u00e9s a\u00f1adimos los ajos tiernos,\u00a0<strong>rehogamos un poco y ponemos las costillas para que se doren<\/strong>. En este momento podemos espolvorear una cucharadita de piment\u00f3n dulce de la Vera. Cuando se hayan dorado bien las costillas, echamos el\u00a0<a href=\"https:\/\/www.directoalpaladar.com\/ingredientes\/cereales\/arroz-bomba\">arroz bomba<\/a>\u00a0y el azafr\u00e1n (o colorante). Si hemos echado tres cacitos de arroz (para tres personas, 225-250g) pues verteremos entre 15 y 18 cacitos de caldo (1250-1500ml). Aunque al principio pueda parecer mucho caldo, como la paella tiene tanta superficie se evaporar\u00e1 la mayor parte.<\/p>\n<p data-mrf-recirculation=\"Article links\">En mi caso he puesto caldo cinco veces la cantidad de arroz y ha quedado meloso, pero si ponemos seis, quedar\u00e1 un poco m\u00e1s caldoso. Si us\u00e1is olla en vez de paella, hay que reducir esta proporci\u00f3n, ya que si no se evaporar\u00e1 menos y quedar\u00e1 excesivamente caldoso.<\/p>\n<p data-mrf-recirculation=\"Article links\">Por \u00faltimo, solo debemos esperar a que se haga el arroz\u00a0<strong>durante 17 a 19 minutos<\/strong>, dependiendo del punto de cocci\u00f3n que m\u00e1s nos guste.
